Yummy Homemade Pancake Recipe & More

I was inspired by Money Saving Mom’s Baking Day and I decided to do my own little mini-baking day this weekend. I have been keeping up with my modified once-a-month cooking plan and so I thought a little baking to help be prepared for other meals might be in order. I made 2 apple pies from scratch (including crust, yum!). I also made up a big batch of pancakes. I sprayed a cookie sheet with Pam cooking spray and laid the pancakes out on the cookie sheet to freeze. Once frozen, I transfered them into a ziploc bag so we can take out 1 pancake at a time. I already had some yesterday for breakfast and they were delicious! Here’s the recipe I used, its super easy and lets you use the ingredients you have on hand so you don’t need to run out and buy buttermilk or any kind of special flour or anything
Pancakes
1 1/2 cups all purpose flour
3 1/2 teaspoons baking soda
1 tablespoon white sugar
1 teaspoon salt
1 1/4 cup milk
1 egg
1 tablespoon Vanilla Extract
3 tablespoons melted butter
Mix the dry ingredients. Add the liquids. Stir. Heat griddle to medium and drop pancakes into griddle using 1/4 cup measuring cup.
Thats it. Easy as pie and soooo delicious! I’ll never buy Bisquick again, thats for sure. Now to find some good discounts on flour and sugar!
