I've never had it stick to the counter. Is it a granite counter?
I've never chilled the dough either.... hmmmm

Use COLD water if you use water in the mix.
Or COLD milk.

I'd just say that there wasn't enough flour on the counter.
When rolling, you might have hit a spot that didn't have enough
flour on it.
Actually, I usually do mine on a flexible plastic type cutting board - just for easier clean up later.

If you are worried about wasting the flour, use it later for gravy or similar.

It tasted good, but it stuck quite a bit to the counter! I'll have to work on it... any ideas? Should I chill the dough longer do you think (I did about 1/2 hour). I used plenty of flower on the rolling pin and the counter

Amen to moving toward food that doesn't "slowly kill" you. It's a bit of work in the beginning, but once it becomes routine (like it was for our grandmothers) than it's not that bad. :)
